Blogging: Yawn; Summer: YAY!!

I've been busy playing iphone games...

And being really, really exhausted 'cause I don't sleep well anymore.

I'm really glad morning sickness is over, believe me, but that doesn't mean I'm going to stop complaining. Noooooooooo.  It means I have different, MUCH less awful things to complain about :D!!! Only my mom will still love me at the end of all this, but that's okay, at least she does!! Anyway, the moral of this story is, lots of stuff going on and Idontwannablogaboutit.

Menu for the week

Salmon Pasta Salad:  Cook spiral pasta and drain well. Add some diced tomato, cucumber, celery, red onion and a clove of garlic. Then add 1//4-1/3 cups olive oil, 1/3 cup lemon juice, 2 tsp of dill weed (or 2 TBS if fresh), a teaspoon of salt, and a generous 1/4 tsp of pepper. Mix together and crumble cooked salmon over the salad. Serve over lettuce, if desired. YUM! I swear my kids even gobbled this up.

Spinach and Lentil soup:
1 cup shredded carrots
1 large onion, chopped
1 TBP olive oil (again, I just use chicken broth, tastes just as good if not better)
6 cups water
1 (16oz) jar of salsa
1 1/4 cup dried lentils, rinsed
3/4 tsp salt
1 (10 oz) package fresh spinach, torn
In a large saucepan, saute carrots and onions in broth until tender. Add water, salsa, lentils and salt. Bring to a boil. Reduce heat; cover and simmer 50-60 minutes or until lentils are tender. Stir in spinach; simmer until wilted. This is good, healthy and cheap...if you have your own canned salsa. Plus, play with the amounts to suit your tastes.

Chicken and sun-dried tomato bruschetta: I made this once when I found sundried tomatoes at the supermarket just sitting out, not packed or canned. I was like "oh yah". Marinate 2 boneless chicken breasts in a cup of Italian salad dressing (low cal is just as good) for 3 hours. Grill chicken, then cool and shred. I used the George Foreman and it worked great. Mix chicken, 4 cups of torn fresh spinach, 1/3 cup crumbled feta cheese and a bunch of chopped sundried tomatoes (8 or so). Add 1/4 cup of Italian salad dressing. Serve in pitas or on focaccia bread.

Hamburger Soup: Got this one from my mother-in-law. It's not as good when I make it for some reason, but it's still good and my kids devour it. Just saute the ground beef with an onion, chopped carrots, celery and garlic (or whatever of those you have). When beef is browned, fill up the pot with water to cover the veggies, add diced potatoes (if you have) some V8 juice, a can of diced tomatoes, salt and pepper and ketchup, in whatever amounts you like. I also add worcestershire sauce and basil. Then when I serve it to the kids I add frozen peas to cool it down. Serve with bread or buns.

P.S. I made NONE of these recipes up (although some I alter and then forget the original)!! I would give credit where credit is due if I could remember who to give credit to <---poem

Am I feeling better?




I'd say I'm feeling pretty good these days! YAY! It's over!! :)
We went camping this weekend and it was so fun!
Camping food is the best. Jesse kept asking in frustration: "Why is camping food so much better than regular food?!" Well, buddy, it could have something to do with the amount of licorice and cookies and chips and grease we consume that we don't at home! But really, I think everything tastes better when camping! Highlights were the blueberry pancakes, tinfoil dinners, and the pears.
Roasting hotdogs. Jesse got a bit too close and singed his hair and eyelashes. Haha!
Getting muddy!!
Climbing and hugging at the hoodoos. I think this was Jesse heaven. His one disappointment: not seeing a rattlesnake.
The cousins came to visit. Everything is more fun with the cousins. And more loud. At one point Wade (the crazy cute one on the right, emphasis on "crazy" but boy is he funny) made a sound like "aaaahhhh" and then someone else joined the chorus, until soon they were all making the same noise. I felt bad for our neighbours but it was funny.

And now I'm exhausted, and I can't wait to do it again!

They are so cute together!





And they're getting married!!!!!! I'm so happy for my sister. Dave is wonderful and so nice and they are at the cutest in-love stage!

Menu for this week

Monday: Chicken fingers (I coat them in egg whites and crushed corn flakes and salt and pepper) with honey mustard dip and steamed veggies

Tuesday: Taco salad- pretty standard: just break up nacho chips, top with taco-seasoned ground beef, cheese, shredded lettuce, tomatoes, salsa and sour cream-or you could do it in the chip bag!

Wednesday: Salmon (I just fry it-no oils required! Or you can bbq it) and some kind of chickpea salad. I love chick pea salad. Not everyone does, but they should :)

Thursday: BBQ Steak and low-fat linguine alfredo (here's a random recipe I found online) with garden salad

Friday: Veggie quesadillas- you can cut up whatever veggies you have in the fridge into small chunks (zucchini, red onion, squash, carrots, peppers, mushrooms, etc.) season well and saute them until tender, then make your quesadillas with tortillas and (low fat) cheese. Make sweet potato fries and you've got a meal.
